Apple Pie Sausage French Toast Casserole

If you've got folks coming over for brunch, this is the dish. The sausage tastes like fall in a link — apples, brown sugar, warm spices — and it folds right into custardy French toast like the two were meant to meet.

Ingredients

  • 16 oz Apple Pie Sausage sliced into 1/2-inch coins
  • 1 small loaf brioche bread about 8 cups, cubed
  • 3 large eggs
  • 1 cup whole milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract optional
  • 2 tablespoon brown sugar
  • Butter for the dish
  • Powdered sugar for serving
  • Pure maple syrup for serving

Instructions

  • Brown the sausage. Preheat the oven to 350°F. Heat a skillet over medium and cook the sausage coins until browned on both sides, about 4–5 minutes total. Set aside.
  • Mix the custard. In a large bowl, whisk the eggs, milk, cinnamon, vanilla, and brown sugar until smooth.
  • Build the casserole. Butter a 9×13-inch baking dish. Add the cubed brioche, pour the custard over the top, and toss until the bread is well coated. Fold in the sausage so it's evenly distributed.
  • Bake. Slide the dish into the oven and bake 25–30 minutes, until the top is golden and the custard is set in the middle.
  • Finish and serve. Dust with powdered sugar and serve warm with plenty of maple syrup. Coffee strongly recommended.
