16ozApple Pie Sausagesliced into 1/2-inch coins
1small loaf brioche breadabout 8 cups, cubed
3large eggs
1cupwhole milk
1teaspoonground cinnamon
1teaspoonvanilla extractoptional
2tablespoonbrown sugar

Instructions
Brown the sausage. Preheat the oven to 350°F. Heat a skillet over medium and cook the sausage coins until browned on both sides, about 4–5 minutes total. Set aside.
Mix the custard. In a large bowl, whisk the eggs, milk, cinnamon, vanilla, and brown sugar until smooth.
Build the casserole. Butter a 9×13-inch baking dish. Add the cubed brioche, pour the custard over the top, and toss until the bread is well coated. Fold in the sausage so it's evenly distributed.
Bake. Slide the dish into the oven and bake 25–30 minutes, until the top is golden and the custard is set in the middle.
Finish and serve. Dust with powdered sugar and serve warm with plenty of maple syrup. Coffee strongly recommended.
