Think of this as a deconstructed loaded baked potato for breakfast — tater tots get crispy in the oven while the sausage browns up in a skillet, and a dollop of sour cream and chives makes it brunch.

Ingredients
16ozBacon Cheddar Sausagesliced or crumbled
132 oz bag frozen tater tots
1/2cupsour cream
1/4cupchopped fresh chives
Optional: shredded cheddarhot sauce, fried eggs
Instructions
Bake the tots. Heat the oven to the temperature on the tots' bag (usually 425°F). Spread them in a single layer on a sheet pan and bake according to the package, until crispy.
Brown the sausage. While the tots bake, heat a skillet over medium and cook the sausage 5–7 minutes, until browned.
Build the bowls. Pile the crispy tots onto plates or shallow bowls. Top with the sausage, a dollop of sour cream, and a generous sprinkle of chives.
Optional add-ons. A handful of extra cheddar, a few dashes of hot sauce, or a fried egg on top all earn their place.
