Sausage and cheese is a quesadilla in a hurry — but black beans and a sautéed bell pepper turn it into a real meal. The cheddar that's already in the sausage doubles up with the cheese in the tortilla, and the jalapeño does the rest.

Ingredients
16ozJalapeño Cheddar Smoked Sausagesliced into 1/2-inch rounds
4large flour tortillas
115 oz can black beans, drained and rinsed
1bell peppersliced
2cupsshredded cheddar or Mexican blend cheese
1tablespoonbutter or oil
Salsa and sour creamfor serving
Instructions
Cook the sausage. Heat a skillet over medium and add the sausage and bell pepper. Cook 5–6 minutes, until the sausage is browned and the pepper has softened.
Add the beans. Stir in the black beans and warm through, 2 minutes more. Transfer to a plate.
Build the quesadillas. Wipe the skillet, melt a bit of butter, and lay a tortilla flat. Sprinkle cheese on one half, top with the sausage mixture, then more cheese. Fold the tortilla over.
Crisp it up. Cook 2–3 minutes per side, pressing down gently with a spatula, until the tortilla is golden and the cheese is melted.
Slice and serve. Cut each quesadilla into wedges and serve with salsa and sour cream.
