Instructions
Crisp the sausage. Heat a large skillet over medium. Add the sausage and cook 3–4 minutes per side, until the brown sugar caramelizes and the edges turn deep golden. Transfer to a paper-towel-lined plate.
Cook the pancakes. Wipe out the skillet, melt a little butter, and pour in pancake batter to your preferred size. Cook until bubbles form on the surface, then flip and cook the other side until golden.
Stack and serve. Layer the pancakes on plates, top with the crispy sausage, and drizzle with warm maple syrup. A dusting of powdered sugar finishes it off.
