Tropical Sausage & Pineapple Skewers

Fire up the grill and let the sausage do what it does best. The pineapple in the sausage talks back to the fresh pineapple chunks, the pepper jack gets a little melty around the edges, and a quick char does the rest.

Ingredients

  • 16 oz Pineapple & Pepper Jack Smoked Sausage cut into 1-inch chunks
  • 11/2 cups fresh pineapple chunks
  • 1 red onion cut into 1-inch pieces
  • 1 red bell pepper cut into 1-inch pieces
  • 2 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Wooden skewers soaked in water 30 minutes (or metal skewers)

Instructions

  • Soak and preheat. If using wooden skewers, soak them for 30 minutes so they don't burn. Heat your grill or grill pan to medium-high.
  • Mix the glaze. Whisk the olive oil, soy sauce, and garlic powder together in a small bowl.
  • Build the skewers. Thread the sausage chunks, pineapple, red onion, and bell pepper onto skewers, alternating as you go. Brush with the glaze.
  • Grill. Lay the skewers across the grates and cook 8–10 minutes, turning every 2–3 minutes, until the sausage gets nice grill marks and the pineapple caramelizes around the edges.
  • Serve immediately. Best straight off the grill, while the cheese is still soft.
