Sweet & Salty Brown Sugar Sausage Pancakes
The brown sugar in the sausage caramelizes into something close to candied bacon. Pile it on a stack of pancakes, hit it with maple syrup, and you've got the kind of breakfast that makes folks slow down at the table.

Ingredients
- 16 oz Bacon & Brown Sugar Smoked Sausage sliced into 1/2-inch coins (or crumbled)
- 2 cups prepared pancake batter your favorite mix
- Butter for the pan
- Pure maple syrup for serving
- Powdered sugar optional
Instructions
- Crisp the sausage. Heat a large skillet over medium. Add the sausage and cook 3–4 minutes per side, until the brown sugar caramelizes and the edges turn deep golden. Transfer to a paper-towel-lined plate.
- Cook the pancakes. Wipe out the skillet, melt a little butter, and pour in pancake batter to your preferred size. Cook until bubbles form on the surface, then flip and cook the other side until golden.
- Stack and serve. Layer the pancakes on plates, top with the crispy sausage, and drizzle with warm maple syrup. A dusting of powdered sugar finishes it off.
