Loaded Jalapeño Cheddar Sausage Quesadillas

Sausage and cheese is a quesadilla in a hurry — but black beans and a sautéed bell pepper turn it into a real meal. The cheddar that's already in the sausage doubles up with the cheese in the tortilla, and the jalapeño does the rest.

Ingredients

  • 16 oz Jalapeño Cheddar Smoked Sausage sliced into 1/2-inch rounds
  • 4 large flour tortillas
  • 1 15 oz can black beans, drained and rinsed
  • 1 bell pepper sliced
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 tablespoon butter or oil
  • Salsa and sour cream for serving

Instructions

  • Cook the sausage. Heat a skillet over medium and add the sausage and bell pepper. Cook 5–6 minutes, until the sausage is browned and the pepper has softened.
  • Add the beans. Stir in the black beans and warm through, 2 minutes more. Transfer to a plate.
  • Build the quesadillas. Wipe the skillet, melt a bit of butter, and lay a tortilla flat. Sprinkle cheese on one half, top with the sausage mixture, then more cheese. Fold the tortilla over.
  • Crisp it up. Cook 2–3 minutes per side, pressing down gently with a spatula, until the tortilla is golden and the cheese is melted.
  • Slice and serve. Cut each quesadilla into wedges and serve with salsa and sour cream.
