Bacon Cheddar Skillet with Potatoes & Broccoli
A one-skillet supper that's basically a loaded baked potato in pan form. Crispy potatoes, tender broccoli, melty cheddar on top — and the sausage doing most of the seasoning.

Ingredients
- 16 oz Bacon Cheddar Sausage sliced into 1/2-inch rounds
- 4 medium russet potatoes cubed
- 1 head broccoli cut into florets
- 1 cup shredded sharp cheddar
- 1 tablespoon neutral oil
- Salt and pepper to taste
- Sour cream and sliced green onions for serving
Instructions
- Crisp the potatoes. Heat the oil in a large skillet over medium. Add the cubed potatoes and the sausage. Season with salt and pepper. Pan-fry 15 minutes, stirring occasionally, until the potatoes start to crisp at the edges.
- Add the broccoli. Scatter the broccoli florets over the top. Cover with a lid and steam 5–7 minutes, until the broccoli is bright green and tender.
- Melt the cheese. Sprinkle the cheddar over everything. Cover again for 1–2 minutes, until the cheese melts.
- Serve. Spoon onto plates and top with sour cream and green onions.
