Ingredients

  • 16 oz Cajun Smoked Sausage sliced into 1/2-inch rounds
  • 3 bell peppers mixed colors, sliced
  • 1 large onion sliced
  • 1 cup corn kernels fresh, frozen, or drained canned
  • 2 cloves garlic minced
  • 2 teaspoon Cajun seasoning
  • 1 tablespoon neutral oil
  • Hot sauce for serving
  • Cooked rice or cornbread for serving

Instructions

  • Brown the sausage. Heat the oil in a large skillet over medium-high. Add the sausage and cook 4–5 minutes, turning, until the edges are browned.
  • Add the veggies. Toss in the onion, bell peppers, and garlic. Cook 8 minutes, stirring now and then, until the peppers soften and pick up a little char.
  • Stir in the corn. Add the corn and Cajun seasoning. Cook 5 more minutes, until everything is heated through and the seasoning is fragrant.
  • Serve. Spoon over rice or alongside a hunk of cornbread. Hot sauce on the table.
