Cajun Sausage Skillet with Peppers, Onions & Corn
A quick skillet that leans on the sausage to do the heavy lifting. Char the peppers, sweeten the onions, sneak in some corn for that backyard-cookout flavor, and you've got dinner without dirtying a second pan.

Ingredients
- 16 oz Cajun Smoked Sausage sliced into 1/2-inch rounds
- 3 bell peppers mixed colors, sliced
- 1 large onion sliced
- 1 cup corn kernels fresh, frozen, or drained canned
- 2 cloves garlic minced
- 2 teaspoon Cajun seasoning
- 1 tablespoon neutral oil
- Hot sauce for serving
- Cooked rice or cornbread for serving
Instructions
- Brown the sausage. Heat the oil in a large skillet over medium-high. Add the sausage and cook 4–5 minutes, turning, until the edges are browned.
- Add the veggies. Toss in the onion, bell peppers, and garlic. Cook 8 minutes, stirring now and then, until the peppers soften and pick up a little char.
- Stir in the corn. Add the corn and Cajun seasoning. Cook 5 more minutes, until everything is heated through and the seasoning is fragrant.
- Serve. Spoon over rice or alongside a hunk of cornbread. Hot sauce on the table.
