Ingredients
16ozCajun Smoked Sausagesliced into 1/2-inch rounds
3bell peppersmixed colors, sliced
1large onionsliced
1cupcorn kernelsfresh, frozen, or drained canned
2clovesgarlicminced
2teaspoonCajun seasoning
1tablespoonneutral oil
Hot saucefor serving
Cooked rice or cornbreadfor serving
Instructions
Brown the sausage. Heat the oil in a large skillet over medium-high. Add the sausage and cook 4–5 minutes, turning, until the edges are browned.
Add the veggies. Toss in the onion, bell peppers, and garlic. Cook 8 minutes, stirring now and then, until the peppers soften and pick up a little char.
Stir in the corn. Add the corn and Cajun seasoning. Cook 5 more minutes, until everything is heated through and the seasoning is fragrant.
Serve. Spoon over rice or alongside a hunk of cornbread. Hot sauce on the table.
