Jalapeño Cheddar Sausage Breakfast Scramble
When you want breakfast with a little kick, this sausage does the heavy lifting. The cheddar's already in the link, the heat's already there — all you have to do is crack a few eggs and warm up the skillet.

Ingredients
- 1 package about 12–14 oz Jalapeño Cheddar Smoked Sausage, sliced into 1/2-inch rounds
- 6 large eggs
- 1/4 cup milk optional, for fluffier eggs
- 1/2 cup shredded cheddar cheese
- 1/2 small onion diced
- 1 tablespoon butter or oil
- Salt and pepper to taste
- Optional add-ins: hot sauce chopped green onions, warm flour tortillas
Instructions
- Crisp the sausage. Heat a large skillet over medium. Add the sausage rounds — no extra oil needed; they'll render their own fat. Cook 3–4 minutes per side until browned. Move to a plate.
- Soften the onion. In the same skillet, add the butter and onion. Cook 1–2 minutes until just translucent.
- Scramble the eggs. Whisk the eggs with milk, salt, and pepper. Pour into the skillet and stir gently until they start to set, about 1–2 minutes.
- Bring it together. Return the sausage to the pan, scatter the cheddar over the top, and stir until the eggs are cooked through and the cheese is melted.
- Serve your way. Eat as-is, on toast, or rolled into warm tortillas for breakfast tacos. Hot sauce is highly encouraged.
