Ingredients
1packageabout 12–14 oz Jalapeño Cheddar Smoked Sausage, sliced into 1/2-inch rounds
6large eggs
1/4cupmilkoptional, for fluffier eggs
1/2cupshredded cheddar cheese
1/2small oniondiced
1tablespoonbutter or oil
Salt and pepperto taste
Optional add-ins: hot saucechopped green onions, warm flour tortillas
Instructions
Crisp the sausage. Heat a large skillet over medium. Add the sausage rounds — no extra oil needed; they'll render their own fat. Cook 3–4 minutes per side until browned. Move to a plate.
Soften the onion. In the same skillet, add the butter and onion. Cook 1–2 minutes until just translucent.
Scramble the eggs. Whisk the eggs with milk, salt, and pepper. Pour into the skillet and stir gently until they start to set, about 1–2 minutes.
Bring it together. Return the sausage to the pan, scatter the cheddar over the top, and stir until the eggs are cooked through and the cheese is melted.
Serve your way. Eat as-is, on toast, or rolled into warm tortillas for breakfast tacos. Hot sauce is highly encouraged.
