Loaded Bacon Cheddar Stuffed Potatoes
A loaded baked potato done up the right way. The sausage means you don't need to cook bacon separately — every bite already has it.

Ingredients
- 16 oz Bacon Cheddar Sausage sliced into rounds
- 4 medium russet potatoes
- 1 cup shredded sharp cheddar
- 1/2 cup sour cream
- 2 tablespoon butter
- 2 green onions sliced
- Salt and pepper to taste
Instructions
- Bake the potatoes. Heat the oven to 425°F. Pierce each potato several times with a fork. Bake directly on the rack for 50–60 minutes, until tender all the way through.
- Brown the sausage. While the potatoes bake, heat a skillet over medium and brown the sausage rounds, 4–5 minutes per side. Set aside.
- Split and fluff. When the potatoes are done, slice each one open down the center. Pinch the ends to push the insides up. Add a pat of butter to each and fluff with a fork.
- Fill them up. Pile sausage into each potato, then top generously with cheese. Pop them under the broiler for 2 minutes, until the cheese melts.
- Top and serve. Finish each with a dollop of sour cream and a sprinkle of green onions. Salt and pepper to taste.
