A loaded baked potato done up the right way. The sausage means you don't need to cook bacon separately — every bite already has it.

Ingredients
16ozBacon Cheddar Sausagesliced into rounds
4medium russet potatoes
1cupshredded sharp cheddar
1/2cupsour cream
2tablespoonbutter
2green onionssliced
Salt and pepperto taste
Instructions
Bake the potatoes. Heat the oven to 425°F. Pierce each potato several times with a fork. Bake directly on the rack for 50–60 minutes, until tender all the way through.
Brown the sausage. While the potatoes bake, heat a skillet over medium and brown the sausage rounds, 4–5 minutes per side. Set aside.
Split and fluff. When the potatoes are done, slice each one open down the center. Pinch the ends to push the insides up. Add a pat of butter to each and fluff with a fork.
Fill them up. Pile sausage into each potato, then top generously with cheese. Pop them under the broiler for 2 minutes, until the cheese melts.
Top and serve. Finish each with a dollop of sour cream and a sprinkle of green onions. Salt and pepper to taste.
