Sheet Pan Sausage with Roasted Potatoes & Carrots
When you'd rather let the oven do the work, this is the go-to. Hands-off, one pan to wash, and the carrots get especially sweet next to the rosemary and garlic in the sausage.

Ingredients
- 16 oz Rosemary & Roasted Garlic Smoked Sausage sliced into 1/2-inch rounds
- 1 lb baby potatoes halved
- 4 carrots cut into sticks
- 1 yellow onion cut into wedges
- 2 tablespoon olive oil
- 1 teaspoon fresh rosemary chopped (or 1/2 teaspoon dried)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat. Heat the oven to 425°F.
- Toss it all. On a large sheet pan, toss the sausage, potatoes, carrots, and onion with the olive oil, rosemary, garlic powder, salt, and pepper.
- Roast. Spread in a single layer. Roast 30 minutes, stirring halfway, until everything is golden and the carrots are tender.
- Serve. Pile straight from the pan onto plates.
